Spicy Mexican Tomato Soup

Ingredients

1 tablespoon Bertolli Classico Olive Oil,

1 Large onion, cut in half peeled and thin sliced,

4 H-E-B Ready, Fresh, Go! Garlic cloves finely chopped,

4 cups water,

1 can (8 oz.) Hill Country Fare mexican style tomato sauce,

1 Knorr chicken flavored bouillon cube crumbled,

1/2 cup (each) Crumbled H-E-B queso fresco & chopped cilantro,

1 pkg. (8 oz.) H-E-B Fresher LastingĀ® jumbo avocados thin sliced,

1 Large tomato chopped,

2 cups Crushed H-E-B tortilla chips,

Directions

1 Heat a large soup pot over medium heat for 2minutes. Add the olive oil and onions and stir-frythe onions for 5 minutes. Add the chopped garlicand stir-fry for 30 seconds. Add the water, Mexican style tomato sauce and crumbled Knorr hicken bouillon cube. Bring the soup to a boil over high heat. Reduce the heat to low and cook uncovered for 15 minutes (stir ocasionally).

2 To serve soup, place the desired toppings in a soup bowl and pour hot soup over toppings. Enjoy
