Ingredients

1tablespoonvegetable oil,

1cupTexmati rice,

1/2cupchopped tomato,

1/4cupchopped onion,

1tablespoonfresh jalapeno, seeded and chopped,

1/4cupchopped cilantro,

1teaspoonsalt,

1teaspoonground cumin,

Directions

1Heat a 2-quart heavy saucepan on medium high for 2 minutes.

2Add oil and rotate skillet to coat with hot oil.

3Add rice and stir-fry for 2 to 3 minutes until golden.

4Add tomato, onion, jalapeno, cilantro and 2 cups water.

5Bring to a boil and add salt and cumin.

6Cover and reduce heat to medium low, simmer.

7Cook for 20 to 25 minutes or until rice is cooked and fluffy
