1 1/2poundsred potatoes,
4tablespoonsbutter (1/2 stick),
1Scrub potatoes; pat dry. Peel off a thin strip around middle or "belly" of potatoes, for a decorative effect, if desired.
2Melt butter in a large, heavy skillet over Medium-Low heat. Add salt and potatoes. Turn potatoes in butter to coat, cover skillet and cook 25 to 30 minutes, until potatoes are tender. Shake skillet frequently during cooking so potatoes cook and brown evenly.
3Remove potatoes to a serving bowl; toss with salt, pepper and parsley. Serve hot
