Ingredients

1poundfresh mushrooms, sliced,

2cans(7 oz each) green chili salsa, drained,

1can(10-oz) diced tomatoes and green chilies, drained,

1can(5 oz) sliced black olives, drained,

1jar(4-oz) chopped pimentos, drained,

1can(10 oz) baby corn, drained (optional),

1teaspoonsalt,

1tablespoonfresh lime juice,

1/4teaspoonfreshly cracked black pepper,

4 to 5sprigs fresh cilantro, snipped,

Directions

1Combine all ingredients except cilantro.

2Mix gently.

3Cover and refrigerate for three hours or more.

4Sprinkle with cilantro and serve.
