1/2cupextra virgin olive oil,
1/4cupfresh lemon juice,
1teaspoonred pepper flakes,
1Bring 8 quarts water to a boil in a large stock pot.
2Snap stems off and cut the top 1-inch portion off of artichokes.
3Trim pointed tips from leaves with kitchen shears.
4Rinse artichokes under cold water.
5Add artichokes and 2 tablespoons lemon juice to boiling water.
6Cook about 30 minutes until tender.
7Heat charcoal or gas grill while artichokes cook.
8Whisk lemon-red pepper oil ingredients together in a small bowl.
9Drain cooked artichokes and cool slightly.
10Cut in half lengthwise.
11Scoop out center fibrous “choke” with a grapefruit spoon.
12Sprinkle with salt and olive oil.
13Grill 10 minutes or until artichokes begin to char.
14Remove from grill and cut into quarters lengthwise.
15Drizzle with lemon-red pepper oil and serve
