4sea bass fillets,
3tablespoonolive oil or more to taste,
1chopped, medium onion,
1/4teaspoondried red pepper,
5oz.Pitted green olives,
1/2cupwhole toasted almonds,
2teaspoongrated lemon zest,
*dry sherry (optional),
1Sauti onions in 1 teaspoon oil.
2Combine olives, almonds, onions, garlic and pepper flakes.
3Whirl until coarsely chopped.
4Mix in bowl with lemon juice and lemon zest, olive oil and sherry.
5Preheat oven to 375 degrees.
6Apply 1/4 cup of tapenade on each sea bass portion and bake 10 to 12 minutes.
