2poundsfresh Alaskan Keta Salmon fillets, skinned,
*non-stick cooking spray or olive oil,
2cups (3 to 4 bunchesfresh basil leaves,
1/2cupgrated parmesan & Romano cheese,
1/2 tsp.each salt and pepper,
1Heat oven to 450 degrees F.
2Combine pesto ingredients by pulsing about 5 to 10 seconds in a food processor or blender until the texture of fine pebbles. Coat all sides of salmon fillets with pesto.
3Place salmon on a baking sheet prepared with non-stick spray or oil so fillets are not touching. Bake in the top one-third of the oven for 10 to 15 minutes depending on thickness. Allow 10 minutes per one inch of salmon thickness.
