1 - 1 1/2lb.Cod Fillets, thawed,
*McCormick Salt and Ground Black Pepper,
1/2stick (1/4 cup)butter,
1Tbsp.fresh lime juice,
*chopped parsley for garnish, optional,
1Rinse fillets under cold water and pat dry with paper towels. Cut fillets in half. Season both sides with salt and pepper.
2Chop onion very finely to mince. Zest lime; zest only the outer portion of the peel, avoiding the white bitter pith. Squeeze lime for juice.
3Heat a large, non-stick skillet over medium-high heat 2 minutes. Melt 1 teaspoon butter in skillet; tilt skillet to coat bottom. Add cod; cook 2 1/2 to 4 minutes per side for 1/2 to 3/4-inch thick pieces. Remove to a plate and keep warm.
4Melt 2 teaspoons butter in skillet over Medium heat. Add onion and Sauté 1 minute. Add lime juice; stir and heat very briefly. Add remaining 3 tablespoons butter and stir to melt. Heat 1 minute or until butter is frothy and golden.
5Stir in zest; pour sauce over cod. Garnish with parsley, if desired, and serve immediately.
