Baked Lemon-Ginger Grouper

1poundgrouper fillets,

2tablespoonsvegetable oil,


2Tbsp.fresh lemon juice,

1tablespoongrated fresh ginger,

*salt and fine-ground black pepper, to taste,


1Heat oven to 450 degrees F.

2Add oil, butter, lemon juice and ginger to a shallow casserole or baking dish large enough to hold fish.

3Heat dish in oven 5 minutes, until butter melts and just begins to sizzle.

4Remove dish from oven and turn fish in lemon-ginger mixture to coat both sides.

5Season with salt and pepper.

6Return to oven and bake fish 5 to 7 minutes, until the color turns from translucent to opaque (white). Avoid cooking fish until it “flakes,” which indicates fish is becoming dry.
