Ingredients

1bag(16 oz) frozen HCF sliced crinkle carrots, thawed,

1can(8 oz) pineapple chunks,

2tbsp.chopped fresh cilantro,

1/4cupchopped red onion,

1tbsp.chopped fresh jalapeno pepper,

1juice of one fresh lime,

*salt and cracked pepper, to taste,

Directions

1Combine all ingredients in a medium-size bowl and season to taste with salt and pepper.

2Cover tightly and refrigerate for 6 hours or overnight.
