Spinach & Orange Salad

Ingredients

2 6 ounce bags baby spinach trio salad blend,

1 12.3 ounce jar H-E-B Harvest Moon mandarin oranges,

1/2 red onion, thinly sliced,

1/3 cup walnut pieces, toasted,

* Dressing,

1 tablespoon salad oil,

1 tablespoon Bertolli white wine vinegar,

1 tablespoon frozen orange juice concentrate,

1 tablespoon Kelley honey,

Directions

1 Heat oven or toaster oven to 350 degrees.

2 Drain oranges. Slice red onion; cut slices in half and separate rings.

3 Toast walnuts on a small baking sheet 6 to 8 minutes or until lightly browned.

4 Whisk dressing ingredients together in a small bowl.

5 Combine salad blend, oranges and red onion in a large bowl. Toss with dressing and season to taste with salt and pepper. Sprinkle with toasted walnuts and serve
