6medium white potatoes, boiled, peeled, and cubed,
6hard boiled H-E-B eggs, peeled and diced,
1/2cupchopped dill pickle,
1/2cupchopped red or green bell pepper or pimentos,
1cupmayonnaise, regular, low fat, or fat-free,
1Place 6 medium size potatoes into a large pot. Fill pot with enough water to cover one inch over potatoes. Bring water and potatoes to a boil over high heat and cook for 30 minutes, or until they are fork tender. Drain, rinse, peel and cube potatoes.
2Combine potatoes, eggs, onion, pickle, bell pepper and mayonnaise in a large bowl. Toss to coat. Season to taste with salt and pepper.
3Cover with plastic wrap and chill for 30 minutes or more
