Rotini With Spring Vegetables

1/4cupH-E-B Extra Virgin Olive Oil,

1/2cupH-E-B Ready, Fresh Go!® Chopped Sweet Onion,

2H-E-B Ready, Fresh, Go!® Garlic Cloves, chopped,

2 1/2cupsEach: 1-inch cut fresh asparagus thin sliced yellow squash & halved cherry tomatoes,

1box (16 oz.)Barilla Plus Rotini,

6fresh basil leaves,

* salt & pepper,


1Heat a large skillet over medium heat for 2 minutes. Add the olive oil, onion and garlic to the skillet and stir-fry the mixture for 3 to 4 minutes. Add the 1-inch asparagus pieces and stir fry 3 more minutes. Add the halved tomatoes and yellow squash and stir-fry for 3 more minutes. Season the vegetables to taste with salt and pepper, reduce the heat to low and cook for 5 minutes.

2While the vegetables are cooking, prepare the Barilla Plus Rotini according to package directions. Drain the pasta and combine with the cooked vegetables in a large pasta bowl. Thin slice the basil, add to the hot pasta and serve immediately.
