Seared Ancho Pepper Chicken

2teaspoons eachMcCormick gourmet ground cumin & gourmet ancho chili powder,

1/2teaspoon eachMcCormick gourmet saigon cinnamon & coarse ground black pepper,

1/4teaspoonMcCormick gourmet mexican oregano leaves,

1teaspoonGround McCormick sea salt,

2teaspoonsH-E-B extra virgin oil,

1poundHill Country Fare boneless skinless chicken breasts,

2tablespoonsHill Country Fare Canola Oil for searing,


1Heat oven to 350°F. Spray a large baking dish with non-stick cooking spray and set aside.

2Combine the cumin, chili powder, cinnamon, pepper, oregano, salt and oil in a small bowl and stir well to combine into a rub.

3Rub each breast on all sides with the seasoning rub. Heat a skillet over medium high heat for 3 minutes and add 2 Tablespoons cooking oil. Sear the breasts on each side for 1/2 minute and place in the prepared baking dish. Bake the chicken breasts for 25 minutes or until the juices run clear when pierced with a fork.
