Pork & Hominy With Corn Dumplings

1tub (12 oz.)H-E-B Fully Cooked® Carne de Puerco, Seasoned Pork with Juices,

110 ounce candiced tomatoes with green chilies,

116 ounce canyellow hominy,

12.25 ounce cansliced black olives,

1colby jack cheese,

111.5 ounce tuberefrigerated Pillsbury Cornbread Twists,

*chopped cilantro or sliced green onions tops, optional garnish,


1Heat oven to 400 degrees.

2Meanwhile, heat pork in microwave or on stovetop according to package directions; stir and break up pork cubes with edge of spoon. Drain hominy, tomatoes and olives; toss with pork. Spread mixture evenly in a 9-inch round baking dish or pie pan; sprinkle with cheese.

3Open tube of cornbread twists, but do not unroll dough. Separate dough at perforations into 8 round, pinwheel-style pieces. Place over top of casserole, 7 in a circular pattern and 1 in the center.

4Bake casserole 5 to 8 minutes or until tops of cornbread just begin to brown; turn cornbread over and bake casserole 15 minutes longer. Garnish with chopped cilantro or sliced green onion tops, if desired.
