Mustard-Crusted Pork Roast

2poundsboneless pork loin roast,

2tablespoonsMaille original dijon mustard,

1cupcrushed garlic herb croutons,

1teaspoon eachsalt and coarse ground black pepper,

1/2teaspoonground thyme,


1Heat oven to 350 degrees.

2Rub pork with salt, pepper and thyme. Place roast on a rack in a shallow roasting pan and roast 30 minutes.

3Meanwhile, place croutons in a plastic bag and crush with a mallet or rolling pin.

4Remove roast from oven; spread or brush mustard over surface of roast. Sprinkle with croutons and press to adhere croutons to top and sides of roast.

5Return to oven and roast 20 to 40 minutes longer, until a thermometer inserted in the center reads 150 degrees. Remove from oven and allow roast to stand 10 minutes. Slice thinly and serve
