Herbed Chicken With Orzo & Spinach

2piecesfrozen H-E-B Fully Cooked® Lemon Herb Chicken Breasts,

1/4cupAlessi Pine Nuts,

1pintgrape tomatoes,

1/2cupchopped red onion,

1/3cupchopped Gaea Pitted Kalamata Olives,

1 1/2cupauncooked DaVinci Orzo Pasta,

1(5 ounce) bagEarthbound Farm Organic Baby Spinach,

4ouncesfeta cheese crumbles, Mediterranean style,


1Place 2 quarts water in a 3-quart pot and bring to a boil over High heat.

2Meanwhile, heat chicken in microwave according to package directions.

3Toast pine nuts 6 to 8 minutes in a small skillet over Medium heat. Cut tomatoes in half. Chop onion. Chop olives coarsely.

4Cook pasta 3 to 5 minutes in boiling water or until tender; drain well.

5Slice chicken thinly across the grain and then into bite-sized pieces. Toss chicken with hot pasta and spinach in a large bowl. Add tomatoes, onions, olives and cheese; stir gently. Serve warm
