2tablespoonsfresh ginger, peeled and chopped,
1/2cupfresh lemon juice (5 lemons),
1(1.75 ounce) packageShan Chicken Tikka BBQ Mix,
4poundschicken breasts & thighs, skinless (with bones),
1Combine garlic, ginger, lemon juice and Tikka BBQ Mix in a blender or food processor bowl. Process the ingredients for 1 minute until the ginger and garlic are puréed Set mixture aside.
2Cut the chicken breasts into 3 parts and the thighs in half. Combine chicken and the BBQ marinade in a large plastic zippered bag and toss the chicken to cot well with the marinade. Marinate in the refrigerator for 1 to 2 hours, turning bag over every 30 minutes.
3Prepare charcoal or gas grill for low-heat cooking (300 degrees F). Thread the marinated chicken pieces on metal skewers and place on grill. Grill chicken with grill cover closed. Cook slowly for 20 minutes on each side. Baste chicken with melted butter as it cooks.
