6boneless, skinless chicken breast halves,
3tablespoonvegetable oil, divided,
2teaspoonhot pepper sauce (optional),
1avocado, peeled and sliced,
1/2packageH-E-B Queso Quesadilla, sliced,
1Rinse chicken breasts and pat dry.
2Combine lime juice, 2 tablespoons oil, garlic, salt and hot pepper sauce.
3Add chicken and marinate in the refrigerator for 20 minutes or more.
4Drain chicken and reserve the marinade.
5Heat a large skillet over medium heat, add 1 tablespoon of oil, then add chicken.
6Saute for 5 minutes then turn.
7Pour the marinade into the pan, cover tightly and cook about 5 minutes more or until chicken is done.
8Top each chicken breast with a slice of avocado and cheese.
9Cover tightly and steam over low heat for another minute until cheese is melted.
10Garnish with lime slices and cilantro, if desired
