1 1/4cupschicken broth,
1cupsalsa, hot or mild,
1can (15 oz.)black beans, rinsed,
3/4cupshredded cheddar cheese,
1Sauté onion in butter. Add broth and salsa and bring to a boil. Stir in rice and garlic powder. Place chicken over rice, cover and simmer for 10 minutes. Turn chicken and cook for 10 to 15 minutes more.
2Remove from heat,add drained black beans, sprinkle with cheese,cover and let stand 5 minutes to melt cheese.
