Ingredients

1 box (18.25 oz.) Duncan hines cake mix any flavor,

3 Hill Country Fare large eggs,

1/3 cup Hill Country Fare eggs,

1/2 cup Each: hill country fare vegetable shortening and margarine,

1 teaspoon McCormick clear vanilla extract,

4 cups Sifted H-E-B confectioners sugar,

2 Tablespoons milk,

1 bottle Each: wilton's® red sugar sprinkles,

Directions

1 Line cupcake pans with 18 foil or paper liners and set aside. Heat the oven to 350F. Prepare the cake batter according to package directions and spoon 1/3 cup into each cupcake liner. Bake the cupcakes for 20 minutes. Cool cup cakes before icing.

2 Cream the vegetable shortening and margarine in a mixing bowl with an electric mixer on medium to high speed for 3 minutes or until fluffy. Add the vanilla and mix 1 more minute on medium speed.

3 Add the confectioners' sugar to the icing mixture one cup at a time while mixing on medium speed. Add the 2 Tablespoons milk and mix on high speed for 1 minute or until icing is fluffy.

4 Divide the icing evenly into 3 small bowls. Add the blue and red food color to 2 of the bowls of icing and blend well. Ice 6 cupcakes with each color of icing and sprinkle with the matching color sprinkles. Use the red, white and blue sprinkles on the white icing. Arrange the cupcakes on a large platter alternating the 3 colors
