1(12-ounce) jarHarvest Moon Loquats, drained,

1Hill Country Fare Refrigerated Pie Crust,

1(0.44-ounce) packagesugar free or regular apricot or mandarin gelatin,

1(8-ounce) containerfrozen whipped topping (regular or low calorie),

Directions

1Prepare and bake one Hill Country Fare pie crust according to package directions; set aside.

2Drain the loquats and reserve the syrup.

3Slice loquats into bite-size pieces; set aside.

4Pour 1/2 cup loquat syrup or water into a large microwave-safe bowl and sprinkle with the gelatin; stir to combine.

5Microwave gelatin mixture for 45 seconds on high power.

6Add 1/2 cup ice cubes to dissolved gelatin and stir until ice dissolves.

7Combine the whipped topping and dissolved gelatin in a large mixing bowl and stir well to combine.

8Place bowl over a larger bowl of ice and stir gelatin until it begins to thicken (about 3 minutes).

9Add sliced loquats and stir to combine.

10Immediately, pour mixture into baked pie shell and spread evenly. Cover with plastic wrap and refrigerate for 15 minutes to set.
