Christmas Pound Cake

9eggs, separated,

2cupssoftened butter,




4cupssifted cake flour,

1/2teaspooncream of tartar,


1/3cupunsalted butter, melted,

2cupspowdered sugar,


1juice of one orange,


1Preheat oven to 350 degrees.

2Grease a tube, bundt, or specialty pan (or two loaf pans) and line bottom with parchment paper.

3Separate eggs.

4In large bowl, cream 2 cups butter and 2 cups sugar with an electric mixer, gradually beating in sugar.

5Add egg yolks one at a time, beating well after each addition.

6Add vanilla and mace and blend well.

7In another bowl, sift flour, cream of tartar, and salt.

8Using lowest speed of mixer, beat dry ingredients into batter mixture just until blended.

9Beat egg whites in a clean, dry bowl until stiff but not dry.

10Gently fold into batter.

11Pour the batter into prepared pan.

12Bake about 1 hour for loaf pans, 15 minutes longer for a bundt, tube, or specialty pan.

13Cake is done when a skewer inserted near center comes out clean.

14Cool on wire rack.

15Combine 1/3 cup melted butter, powdered sugar, and vanilla and beat in orange juice until desired consistency is reached.

16Spoon or pour glaze over cake, allowing glaze to spill over sides.

17Garnish with fresh fruit and mint, if desired
