1cupH-E-B all purpose flour,
2tsp.Hill Country Fare baking powder,
4packetsH-E-B better sweet sugar replacement,
2TablespoonsHill Country Fare Canola Oil,
1 1/4cupH-E-B small curd cottage cheese, regular low fat or fat free,
1Combine all of the ingredients in a large mixing bowl with 1½ cups of WATER until a smooth batter is formed. If the batter is too thick, add water 1 Tablespoon at a time.
2Heat a pancake griddle or large skillet over medium high heat. Spray the hot pan with non-stick cooking spray. Pour 1/3 cup of batter for each pancake and cook on each side for 1 minute (small bubbles will form) on the first side. Turn over and cook for 1 more minute. Serve pancakes with butter, fresh fruit slices and syrup.
