1 1/2cupsHill Country Fare Frozen Chuckwagon Corn, drained,
1cupH-E-B Shredded Colby Jack or Jalapeno Cheese,
1Heat a large nonstick skiller over High heat for 2 minutes. Add the oil and tortilla strips and stir fry for 2 minutes or until golden. Drain tortilla strips on a paper towel.
2Beat the eggs and add the corn and drained beans. Season to taste with salt and pepper. Place egg mixture in a cast-iron skillet sprayed with nonstick cooking spray and top with shredded cheese. Bake in a 375-degree oven for 8 to 10 minutes or until center is firm. Garnish with tortilla strips and serve
