Ingredients

1lemon, grated rind and juice,

2eggs,

3/4cupsH-E-B Milk,

1cupsugar,

3cups (two 6 oz. pkgs.)Hill Country Fare Biscuit Mix,

1cupOcean Spray Dried Cranberries,

Directions

1Preheat oven to 350°F. Spray a 12 cup muffin pan with non-stick cooking spray; set aside.

2In a large mixing bowl combine lemon rind and juice, eggs, milk and sugar; stir to blend.

3Add biscuit mix and dried cranberries. Pour batter into prepared muffin pan and bake on middle rack of oven for 15-20 minutes.

4Remove from oven and turn muffins onto a clean surface.
