1 (6 or 9 oz.)packageLouis Rich fully-cooked beef,
3/4cupshredded Colby Jack cheese,
1 (12 oz.)containerfresh salsa,
1Layer each of 4 tortillas with 1 1/2 tablespoons cheese, 2 tablespoons salsa and one-quarter of sliced beef or chicken strips.
2Sprinkle 1 1/2 tablespoons more cheese over meat on each tortilla and top each with a plain tortilla.
3Spray tops with non-stick cooking spray.
4Spray 2 medium skillets with non-stick cooking spray.
5Heat skillets over Medium-High heat.
6Using a spatula, place 1 quesadilla in each skillet.
7Heat 2 to 3 minutes, until cheese just begins to melt and bottom of tortilla is lightly toasted.
8Carefully turn quesadillas with a spatula.
9Heat second side 2 to 3 minutes.
10Repeat for remaining quesadillas.
11Cut into wedges and serve with garnishes of your choice and remaining salsa
