2cans (10 oz. each)Rotel® original diced tomatoes & green chilies drained,
1/2cupChopped fresh cilantro,
1can (16 oz.)Rosarita® traditional refried beans,
4Mission burrito-size flour tortillas,
1cupShredded mexican blend cheese,
*Pam® original no stick cooking spray,
1Combine tomatoes and cilantro in a small bowl for salsa and set aside.
2Spread 1/4 of the beans on half of each tortilla. Sprinkle 1/4 cup cheese blend over beans. Fold each tortilla over beans and cheese to form half-moon shape.
3Lightly spray quesadillas with cooking spray. Heat a large skillet or griddle over medium-high heat for 3 minutes. Grill one or two quesadillas on each side for 2 minutes or until lightly browned and cheese is melted. Repeat withremaining quesadillas. Cut each quesadilla into 3 wedges and serve with prepared salsa
