Microwave Peanut Brittle

1 cup H-E-B sugar,

1/2 cup Hill Country Fare white corn syrup,

1 cup H-E-B snax unsalted peanuts,

1 tsp. H-E-B butter or margarine,

1 tsp. Hill Country Fare vanilla extract,

1 tsp. Hill Country Fare baking soda,

Directions

1 Spray a cookie sheet with non-stick cooking sprayand set aside. Spray spatula or spoon with non-stickcooking spray to prevent sticking.

2 Combine sugar and corn syrup in a large microwavesafe bowl. Microwave on high power for 4 minutes. Stirin peanuts with sprayed spoon. Microwave peanutmixture on high power for 3 more minutes.

3 Add butter and vanilla and stir (remember to spray thespoon to prevent sticking). Microwave mixture on Highpower for 1-1/2 more minutes. Add baking sodaand gently stir until light and foamy.

4 Pour peanut brittle mixture onto the prepared cookiesheet and allow brittle to cool 1-1/2 hours Breakinto small pieces and store in an airtight container
