1can (15 oz.)Hill Country Fare fat free refried beans,
1/2cupChopped Harvest Moon sliced red or green jalepeños,
1can (3 oz.)Hill Country Fare fried onions,
12H-E-B whole wheat or 7 grain flour tortillas,
1bag (16 oz.)H-E-B shredded monterey jack cheese,
1Heat oven to 450F. Line two baking sheets with foil and spray with non-stick cooking spray.
2Combine the Hill Country Fare Refried Beans, Jalapeños and Fried Onions in a bowl; set mixture aside.
3Place 3 tortillas on each sheet pan. Sprinkle 1/4 cup of shredded Monterey Jack Cheese on each tortilla. Spread 1/4 cup bean mixture over each quesadilla. Top quesadillas with 1/4 cup of cheese and a tortilla. Spray the tortilla top with non-stick cooking spray and bake in oven for 5 minutes. Remove from oven, turn quesadillas over and bake another 5 minutes or until cheese is melted and tortillas are golden brown.
4Remove from oven, let cool 5 minutes and place on cutting surface. Cut each into 8 wedges, arrange on a platter and serve warm
