Ingredients

8earsfresh corn with shucks on,

1/2teaspoonsalt,

1/2teaspoonfresh ground black pepper,

3tablespoonsbutter,

1tablespoonsugar,

1oniononion chopped,

1/4cupevaporated milk,

1tomato peeled, seeded and chopped,

2eggseggs, beaten,

Directions

1Cut corn from cobs.

2Save cobs and husks.

3Put the largest husks into a pan of boiling water to soften.

4Heat the butter in a pan, add the onion, and cook until soft.

5Add the tomato, salt and pepper and sugar and cook for 5 to 6 minutes.

6Add the corn, milk, and eggs and cook for 10 minutes, stirring constantly.

7Remove the husks from the water and dry.

8Place 3 tablespoons of the corn mixture on the center of each husk.

9Fold the sides of the husks over to form a small package.

10(Use 2 leaves if you need to.

11Tie the packages with string.

12Place cobs in the bottom of a pot.

13Add water halfway up the cobs.

14Place the humitas on top of the cobs.

15Cover the pot and steam for 40 minutes.

16Serve hot
