1/2cupgrated Parmesan cheese,
1/2teaspoonsalt AND black pepper,
1Heat oven to 400 degrees F.
2Cover a large baking sheet with foil for easy clean-up.
3Wash zucchini and dry thoroughly.
4Trim ends from zucchini and cut in half crosswise.
5Cut each half lengthwise into thirds to make wedges.
6Beat eggs in a shallow bowl.
7Combine Parmesan, breadcrumbs, salt and pepper on a plate.
8Dip zucchini in egg, then turn in cheese mixture to coat.
9Place wedges, skin-side down, on baking sheet in a single layer.
10Bake 20 to 25 minutes, until light golden brown.
11Serve while hot
