Bean & Jalapeno Quesadillas

1can (15 oz.)Hill Country Fare refried beans with jalapeños,

1cupH-E-B frozen chuck wagon corn thawed,

1can (3 oz.)French fried onions,

12H-E-B whole wheat or 7-grain flour tortillas,

12thinDeli slices H-E-B monterey jack or jalapeño jack cheese,


1Heat oven to 450F. Line two baking sheets with foil and spray with non-stick cooking spray.

2Combine the refried beans with jalapeƱos, chuck wagon corn and French fried onions in a bowl; set mixture aside.

3Place 3 tortillas on each sheet pan. Place 1 slice of cheese on each tortilla and spread with 1/3-cup bean mixture. Top with another slice of cheese and a tortilla. Spray the tortilla top with non-stick cooking spray and bake in oven for 5 to 6 minutes. Remove from oven, turn quesadillas over and bake another 5 to 6 minutes or until cheese is melted and tortillas are golden brown.

4Remove from oven, let cool 5 minutes and place on cutting surface. Cut into wedges and serve
