1Heat charcoal for 40 minutes, until covered with a layer of gray ash. Test heat by holding palm just above grate. If heat causes you to pull away in 5 seconds, the temperature is ideal (325°F surface). Move heated charcoal to cover half of grate. If using a gas grill, heat one side of grill on high for 10 minutes with lid closed, then reduce heat to medium low.
2Grill 1-inch-thick burgers 5 minutes per side directly over medium-low heat with lid open.
3Move burgers to cool half of grill. Cook 5 to 7 minutes per side with lid closed. Watch for flare-ups. Remove when burgers reach 160°F internal temperature throughout. Let burgers rest 2 minutes before placing on bun.
4Warm buns (split side down) and fully cooked bacon on warm side of grill for 2 minutes with lid closed. Break bacon strips in half.
5Spread 1 tablespoon barbecue sauce on each half of bun. Top buns with 4 pieces bacon, then burger, tomato, and lettuce. Cut burgers in half if desired and serve immediately.
6Oven option: Roast 1-inch-thick burgers on a foil-lined baking sheet on the center rack of a 450°F oven for 25 minutes.
