Cavatappi and Spinach Cilantro Pesto
1/4 c. Texas pecans
1 bunch cilantro, chopped
2 c. spinach
1 clove garlic
2 Tbsp. olive oil
1/4 c. parmesan cheese
5 c. cavatappi pasta, cooked according to package directions
Combine all ingredients except pasta into a blender and blend until smooth.
Cook pasta according to package directions. Strain then return to the pot.
Mix 1 oz pesto into 1 cup pasta while still warm.
