2 medium sweet potatoes
3/4 lb. extra lean ground beef
1 3/4 c. Cookwell & Co. Two-Step Chili Mix
1/2 c. green onions
1/3 c. 2% shredded cheddar cheese
Preheat oven to 350ºF. Wash sweet potatoes and poke holes in them with a fork. Bake until
tender, approximately 45 minutes.
Meanwhile, brown beef in a large non-stick skillet. Add chili mix, bring to a simmer and r
educe heat. Cook on Low while potatoes bake.
Carefully remove sweet potatoes from oven. Cut each potato in half lengthwise. Using a for
k, gently mash the flesh of the potato inside the shell.
Spoon a generous amount of chili over each potato and top with green onions and a sprinkle
