1 Tbsp. vegetable oil
1 lb. large scallops
1/2 tsp. black pepper
1 tsp. lemon zest
Place a large non-stick skillet over High heat. Add oil and heat until almost smoking.
Season scallops with pepper and lemon zest, place in skillet, and sear 4 minutes.
Turn scallops and remove pan from heat. Serve immediately.
