Chunky Chicken & Bean Chili
2 Tbsp. olive oil
1 lb. boneless skinless chicken breast
2 cloves garlic, chopped
1/2 tsp. gound cumin
1 can (4 oz.) diced green chilies
1 ctn. (32 oz.) low sodium chicken broth
2 cans (15 oz. each) white beans rinsed and drained
1/2 c. monterey jack cheese
Place a large pan on Medium-High heat. Add oil and then chicken. Cook several minutes.
