Gnocchi with Power Greens and White Beans
16 package (16 oz.) shelf stable gnocchi, potato
1 medium onion, thinly sliced
3 cloves garlic, chopped
1 5 oz. cont. Central Market Organics, Power Greens or spinach
1 15 oz. can stewed tomatoes
1 15 oz. can white beans, rinsed
1/2 c. 2% shredded mozzarella
2 Tbsp. olive oil
1/4 cup parmesan cheese
1/2 tsp. black pepper
Heat olive oil in a large non-stick skillet over medium high heat. Add in gnocchi and cook
until browned. Approximately 5 to 6 minutes. Remove from heat and transfer to a bowl.
Return the skillet to the heat. Add the other tbsp. of olive oil and onions. Cook for 3 to
4 minutes until onions become translucent. Add in the garlic and the 1/2 cup water. Cook
an additional 3 minutes. Add in Power Greens and cook until wilted. Then stir in tomatoes,
beans and gnocchi. Bring to a simmer for 3 to 4 minutes. Remove from the heat and serve.
Sprinkle with parmesan and mozzarella cheese.
