1/4 c. pecans, chopped
2 Tbsp. pumpkin spice
1 extra large egg
1 Tbsp. oil
3/4 c. milk
1 c. H-E-B Original Pancake Mix
Preheat lightly oiled pan or griddle to 375°F.
Mix all ingredients; blend well (somewhat lumpy batter makes light, fluffy pancakes).
Combine pumpkin spice with batter.
Spoon 1/4 cup pancake batter into hot pan and immediately sprinkle with 1 Tbsp. of pecans.
Cook about 1 - 1 1/2 minutes on each side.
Turn when bubbles break and edges start to dry (turn pancake only once).
