Warm German Potato Salad

2 Tbsp. Ottavio grapeseed or olive oil

2 lb. red or yellow potatoes, cut in half

1/4 tsp. Adams Reserve House Rub

1/2 c. sweet onion, finely chopped

1/2 c. bell pepper, finely diced

3/4 c. Better than Good Bacon Jam


Heat a large skillet to medium-high. Add oil and potatoes. Lightly season with Adams Rub.
Cook uncovered 10 - 15 minutes or until potato skins begin to brown nicely.
Add onion and bell pepper and sauté 2-3 minutes (add more oil if necessary). Reduce
heat to medium and cover. Cook just until potatoes are tender, but still slightly firm. P
otatoes can also be oven roasted to same doneness if preferred.
Turn skillet off and pour bacon jam over the top, stir just to heat through. Season with m
ore Adams Rub if desired and serve warm.
