Pan Seared Tilapia with Citrus Slaw
2 c. H-E-B Shredded Cabbage
1/2 red onion, sliced thin
2 limes, juiced
1/4 c. greek yogurt
1/4 c. chopped cilantro
2 Tbsp. olive oil
4 tilapia fillets
1 tsp. pepper
4 rolls or buns
1/2 tsp. salt
Combine cabbage, red onion, lime juice, Greek yogurt, and cilantro in a medium size mixing
bowl. Cover slaw and set aside.
Place a large nonstick skillet over Medium-High heat. Add oil and heat.
Season tilapia wit
h salt and pepper. When oil is hot, carefully place fillets in
skillet. Cook 3 to 4 minute
s per side. Remove and place on rolls.
Top with citrus slaw and serve.
