3 Tbsp. Ottavio Grapeseed Oil, divided
1 1/2 lb. salmon filet
2 Tbsp. Adams Reserve House Rub
1/2 c. Better Than Good Bacon Jam

Preheat oven to 400ºF. Place a skillet over medium-high heat.
Rub 1/2 of grapeseed oil on salmon fillet and season with Adams Rub.
Add remaining oil to preheated skillet and heat until shimmering but not smoking. Add fish
skin-side up. Cook 4 - 5 minutes, turn over and cook an additional 4 minutes, depending o
n thickness of fish.
Spoon bacon jam over fish and bake 1 - 2 minutes to finish cooking (allow 10 minutes total
cooking time per inch of thickness).
