Ingredients

2 bake shop rounds

2 oz. low sodium ham

4 eggs

1/4 c. shredded fat-free cheddar cheese

4 Tbsp. salsa

Directions


Preheat oven to 400°F. Gently toast bake shop rounds on a foiled sheet pan then remove
and set aside.
In a nonstick pan over medium high heat, cook the Canadian bacon, remove, then gently scra
mble the four eggs. Season with pepper.
On each toasted round place a spoonful of salsa then ham, eggs, then cheese. Place back in
the oven and bake until cheese is melted.
Top with more salsa if desired and serve.
