Pistachio Crusted Chicken Fingers
1/3 c. honey
1/2 c. whole grain mustard
1 lb. chicken tenders
1/2 c. finely ground pistachios
1/2 c. crushed panko bread crumbs
1/2 c. all purpose flour
1/2 tsp. each salt and pepper
Preheat oven to 375°F. Combine honey and mustard in a small
bowl. Remove of mixture to
a second bowl to brush on chicken. Set
remaining honey mustard aside.
In a resealable bag, combine pistachios and bread crumbs. In a
separate resealable bag com
bine flour, salt, and pepper.
Place chicken tenders in bag with flour. Shake to coat. Remove chicken
and brush with hone
y mustard. Toss in bag with pistachios and bread
crumbs. Shake until coated. Remove chicke
n and place on a lightly
greased baking sheet.
Bake 25 minutes. Serve with honey mustard.
