Chicken & Spinach Artichoke Calzone
1/2 pkg. chicken feta sausage, casings removed
1 pkg. (5 oz.) spinach, chopped
8 artichokes, drained and chopped
1 jar (8 oz.) marinara sauce
* all purpose flour
1 pkg. refrigerated pizza dough
1 c. shredded part skim mozzarella
2 Tbsp. olive oil
Preheat oven to 400°F.
Place a sauté pan over Medium-High heat. Add sausages, breaking up
with a fork, and
cook 6 minutes until crumbled and nicely browned.
Combine cooked sausage, spinach, artichokes, and marinara sauce in a large bowl.
Lightly dust 2 baking sheets with flour and place 1 pizza crust on each. Spoon 1/2 of saus
age mixture on 1/2 of each crust and top with 1/2 of cheese. Fold dough over and cut 2 sli
ts on top of each calzone for ventilation.
Using a fork, crimp edges of crust together creating a tight seal. Brush with olive oil an
d bake 30 minutes. Cool a bit before slicing.
