Seared Chicken With Black Beans, Cilantro & Roasted Peppers
1 Tbsp. chopped garlic
2 Tbsp. canola oil
1/2 tsp. each salt & pepper
4 (5 oz.) boneless skinless chicken breasts
1 can (15 oz) black beans, rinsed and drained
1/2 jar (12 oz.) H-E-B Harvest Moon Fire Roasted Red Peppers, rough chopped
1 bunch cilantro, chopped
1/2 c. H-E-B Low Fat Sour Cream
Preheat a large sauté pan to Medium-High.
In a bowl combine garlic, oil, salt and pepper. Add chicken and turn to coat.
Place chicken in hot pan, sautéing 6 to 7 minutes per side. Cooking time will differ
depending on thickness of meat.
Add in black beans and chopped peppers, and cook 3 minutes.
Finish with chopped cilantro and sour cream.
