Seared Salmon with Broccoli & Lemon

2 Tbsp. canola oil, divided

4 (6 oz.) salmon filets

* salt and pepper to taste

3 red potatoes, sliced 1/4 thick

1/2 bunch broccoli, chopped small

1 1/2 c. Central Market Low Sodium Chicken Broth

2 lemons, juiced


Preheat oven to 350°F.
Preheat a large sauté pan to Medium-High. Add 1 Tbsp. canola oil.
Season salmon with salt and pepper and place in preheated pan. Sear one side of salmon and
set aside about 5 minutes.
In the same hot pan add remaining oil and potatoes, and sauté 5 minutes on each sid
e. Season with salt and pepper.
Add broccoli and sauté another 3 minutes.
Place salmon (seared side facing up) on cooked broccoli/potato mixture. Add broth and lem
on juice, and bake 15 minutes.
