Ingredients

• non-stick cooking spray

2 large eggplants

2 Tbsp. olive oil

1 jar Cookwell & Company Two-Step Veracruz Mix

1/2 c. Hill Country Fare 100% Whole Grain Bread Crumbs

6 Tbsp. Boursin Light Garlic & Herbs Cheese

Directions


Preheat oven to 350°F. Coat a casserole dish with nonstick spray and set aside.
Peel eggplants, slice, and dice into 1" cubes.
Heat a large skillet over Medium-High heat 2 minutes. Add oil and eggplant. Sauté 3-
4 minutes, until fork tender.
Add Veracruz mix, stir, and cook until warmed through.
Transfer to prepared dish; top with bread crumbs and cheese. Bake 20 minutes.
