Mole Pork Tacos

3-4 lbs. boneless pork shoulder roast

3 cloves garlic, minced

1 sweet onion, sliced

1 jar (9 oz.) mole mexican condiment

2 c. low sodium chicken broth

12 H-E-B Corn Tortillas, warmed

1/4 c. cilantro, chopped


Trim fat from roast. Place roast, garlic, and onion in a slow cooker.
Combine mole and broth in a medium bowl; pour over all in slow cooker.
Cover and cook on Low heat 8 hours.
Remove meat and shred using two forks.
Fill each tortilla with meat and top with cilantro.
